For a lot of businesses, it's a buzzword used to hook guests into their dining rooms. But for The Chiles Group, it's a driving force for every decision we make in our restaurants. It's why environmental sustainability is a pillar of our business model. In 2017, we started Gamble Creek Farms to supply our restaurants with USDA Organic Produce and over the years have made an effort to partner with local ranches to provide the meat that we serve. For us, farm to table means providing superior ingredients made by the people in this community.
So when Cody, aged 12, and his Father, who operates a ranch in Parrish brought us one of their Steers, we considered it an honor and community obligation to treat this animal with respect and bring the food cycle full circle. This steer was raised locally by Cody and even shown at the Manatee Fair. The Chiles Group purchased the animal to support our local ranching community but more importantly had a level of trust in the way this animal was raised and cared for. The chef's at The Sandbar, Beach House and Mar Vista then create unique dishes around this USDA Certified Brangus Steers meat.
